The Magic of Minus 8

8 is a magical number as it has historically been associated with affluence, regal status and even infinity. Within the making of Minus 8 Ice Wine Vinegar there is a mysterious and magical synchronicity with the number 8. The grapes are harvested only when the temperatures drop and hold at -8ºC. Grapes oxidize on the vine over the autumn & winter adding complexity to the flavour of the juice. When at least -8ºC the water component of the juice begins to turn into ice inside the fruit, dehydrating and concentrating the sugars, acids and flavors; leaving them in liquid form to be pressed out. The grapes are immediately pressed at freezing temperatures to extract the purest juice. There are also 8 main types of grape; both red & white that are used in the Minus 8 formula. The exact composition is a trade secret known only to the winemaker. Yet a trained nose can sometimes discern several of the varieties used. The next step in the process is to make wine from the juice. The winemaker blends the varieties according to his tastes to create the base wine for Minus 8 vinegar. Wine making with this special juice takes up to 8-9 months. Perhaps just a coincidence, but when one tastes the sweetness in food enhanced with Minus 8, there is no doubt that it is truly a regal product!
