Minus 8's Complexity of Flavor Via Aging

The very special Ice Wine Vinegar known as Minus 8 is aged several years before release, partially in French Oak. It is blended similar to the way sherry is blended in a solera system. The first vintage of this vinegar is 1997. That's when a Canadian winemaker first sought to create an alternative to balsamic vinegar. When ready, a portion of each vintage is blended for the final bottling. A small portion of each vintage is also reserved for blending in future years. This intricate mixing brings a complexity of flavor and depth of age to the overall process. This system helps to provide the flavor consistency of Minus 8 from year to year. Minus 8 is bottled in hand numbered glass and sealed with cork and wax. It will then age for many years. For long term cellaring, store it upright, in wine cellar conditions. After opening, if you intend to keep the bottle longer that 2 months, store it in the refrigerator to preserve flavors as long as possible.
