Summertime Spinach Salad Delight

Nothing beats a hot summer night than a cool and refreshing summer salad. Add alittle Minus 8 Vinegar and you've got a healthy meal that packs a mild punch too! 

Dutch Spinach Salad
6 Cups Fresh spinach, torn into bite-sized pieces
1/4 Cup Chopped onion
4 Slices Bacon, diced
1/4 Cup Minus 8 Ice Wine vinegar
1 Tbsp. Sugar
1 Tsp. Salt
1/4 Tsp. Ground black pepper

Place spinach and onion in a large serving bowl; set aside. In a skillet, sauté bacon until crisp; remove from heat. Stir in vinegar, sugar, salt and black pepper. Bring to a boil. Slowly pour hot dressing over spinach and onion; toss and serve at once. Yield: 4 to 6 portions

Ingrediants Worth the Splurge...

One of the most fantastic things about this very fine wine vinegar is that not only is it a perfect ingredient for desserts, it can also be used in salads, on meat, seafood and poultry dishes. In the long haul - gives it one heck of a big bang for one's buck.

Not only is Minus 8 a very rare and unusually culled vinegar ingrediant, it's also a digestif. So it's not likely to be one of those products you purchase for one rare dish - that ends up collecting dust in the pantry. In fact, we highly suggest you purchase a bottle and use it on practically everything for a month and shake some of the dullness out of your ordinary methods of cooking for a change. Minus 8 Vinegar - Not Just Another....

It is obvious that the primary requirement to make ice wine and it's spinoff product, ice wine vinegar is that cold temperatures are needed. What's not clear to most is that in order to harvest the grapes for Minus 8 Ice Wine Vinegar, certain qualifying standards must be met. For instance, Canada is more suited to producing ice wine than France. In Ontario, weather conditions in the Niagara peninsula are more suited to freezing temperatures. Geographically, the Minus 8 vineyard is located in the Niagara Region, which is dubbed "the banana belt" because of its prolific agricultural production. This is a naturally cool climate region for grape growing. Yet only when nature creates the required conditions and harvest standards are met in a timely fashion can a successful vintage be made. Ice wine must be produced exclusively from grapes that have been harvested, naturally frozen on the vine, and pressed in a continuous process while the air temperature is -8 Celsius. This actually means that the winemaker must actually wait for the temperature to drop to -9C and actually hold in that range and then a rush is on to cull and press the grapes. Timing is everything. If freezes come too late, the grapes may be dehydrated. It is the delicacy of this process and how the grapes are handled that yields a successful vintage and is what sets Minus 8 apart.

Flavor Up An Ocean Trout

We found this recipe had landed at the classy St. Regis in Dana Point by acclaimed chef Michael Mina, once again proving yet another chef's choice of Minus 8!  Ingredients: 6oz portion ocean trout or salmon (skin on), cleaned1 cup cauliflower, sliced2 cups water1 tsp butter, melted1 tsp heavy cream, warmed1 tbsp golden raisins, bloomed (rehydrated) in water5 Muscat grapes, peeled1 tsp celery, diced in ¼ inches 1 tsp capers, rinsed1 tbsp lemon olive oil, 1 tsp Minus 8 vinegar, 1 tbsp micro mint (or small leaves from regular mint), 1 pinch French sea salt, 1 tbsp clarified butter.
